About the Wine

Winemaker notes
The wine is made from hand-picked grapes of 54-year-old plantations from the southern slopes of Sakar mountain. The vineyards are cultivated on stony, sandy, red-brownish clay soil with marble pieces in an ecologically clean area. The grapes are cold-soaked for 24 hours before draining, without using a press, thus only the juice is fermented. It is an old technology rarely seen in Bulgarian cellars. This single-flow technique makes a unique light wine with a beautiful consistency somewhere between rosé and red.Maturation in steel vessels, 2500 bottles.
